Description
Grape variety: I.G.T grapes from the Basilicata region.
Grape harvest: first ten days of October.
Vinification: 5-day maceration and first fermentation in stainless steel containers.
Second fermentation: in an autoclave (Martinotti method), without adding sugar; second fermentation of the residual sugar of the must obtained from the first fermentation.
Organoleptic test:
• Perlage: intense.
• Colour: brilliant ruby red with purple red shades.
• Nose: notes of black cherries, raspberries, and blackberries followed by scents of cyclamen, strawberries, blueberries, and prunes.
• Palate: soft, fresh, full, and tannic.
Pairings: soups with boiled meat, cold cuts, cheeses, and soups.
Service temperature: 8°-10°C.
